Characteristics

When the grapes reach the optimal point of phenolic maturity, they are manually harvested with the selection and destemming of grapes and then a further selection of berries. The selected berries undergo a 48 hour cold soak, after which they are delicately crushed. The fermentation takes place in new French oak barriques.
